Green beans with tomato, garlic and olive oil

A fresh, vibrant, and delicious recipe that celebrates the beauty of just a handful of ingredients. Naturally plant-based and bursting with flavour.

Serves: 4 

Time: 5 minutes prep + 30 minutes cooking 

Ingredients: 

50ml Zaytoun Extra Virgin Olive Oil 

8 garlic cloves, peeled and thinly sliced 

500g green beans, trimmed and in half 

2 medium (or 4 smaller) tomatoes, chopped small 

Bread/toast, to serve 


Method: 

1)In a large non-stick pan, sauté the sliced garlic in all of the olive oil on low heat for a few minute allowing the flavour to infuse.

2)Add the green beans and salt, then stir to fully coat the beans in the oil and garlic. Simmer for 5-10 minutes to soften. 

3)Add the tomatoes, turn up the heat to medium and once gently bubbling, cover with a tight lid and simmer on low heat for 20-30 minutes.

4)Stir every 5 minutes to prevent from sticking and allow tomatoes to break down.

5)Can be served warm or cold but ideally at room temperature with crusty bread.
