A refreshing recipe for a hearty green salad made with maftoul – also known as Palestinian giant couscous – and tossed with an olive oil dressing and sprinkled with toasted almonds.
Ingredients
- 120g mixed salad leaves, washed
- half a large cucumber
- 100g cherry or vine tomatoes
- 1-2 spring onions
- handful of chopped fresh mint, parsley and coriander
- 2 tbsp Zaytoun Fairtrade and organic olive oil
- juice of half a large lemon or lime
- salt and pepper to taste
- Optional extras – avocado, feta or halloumi, and toasted Zaytoun raw almonds or seeds
- 100g Zaytoun organic maftoul
Method
- Cook the Zaytoun organic maftoul following pack instructions and leave to cool
- Roughly chop the salad leaves
- Dice the cucumber into small bite-size cubes
- Half the cherry tomatoes
- Slice the spring onions
- Roughly chop the herbs
- Toss all the salad ingredients in a bowl with the cooled maftoul
- Drizzle with olive oil and lemon juice, then sprinkle with salt and pepper to taste and toss again
- Sprinkle with optional extras such as chopped avocado, feta, grilled halloumi, toasted almonds or seeds.
