Maftoul salad with an olive oil dressing

A refreshing recipe for a hearty green salad made with maftoul – also known as Palestinian giant couscous – and tossed with an olive oil dressing and sprinkled with toasted almonds.

  1. Cook the Zaytoun organic maftoul following pack instructions and leave to cool
  2. Roughly chop the salad leaves
  3. Dice the cucumber into small bite-size cubes
  4. Half the cherry tomatoes
  5. Slice the spring onions
  6. Roughly chop the herbs
  7. Toss all the salad ingredients in a bowl with the cooled maftoul
  8. Drizzle with olive oil and lemon juice, then sprinkle with salt and pepper to taste and toss again
  9. Sprinkle with optional extras such as chopped avocado, feta, grilled halloumi, toasted almonds or seeds.
