Za’atar is a cupboard essential as it’s so versatile and adds fragrant flavours to so many dishes. Here is a simple but delicious way to enjoy za’atar as a starter or picnic snack – with friends and family.
Ingredients:
2 tbsp Zaytoun za’atar
100g feta
2 tbsp Zaytoun extra virgin olive oil
Two sheets ready-made puff pastry (preferably with no palm or seed oils)
Egg or milk for brushing
Method
1 - In a small mixing bowl, combine za’atar and olive oil until it becomes a paste.
2 - Lay one sheet of puff pastry on a non-stick surface and brush za’atar paste onto it, ensuring the edges are covered too. (Ensuring the edges are covered with zaatar helps the puff pastry not open up whilst baking). Crumble the feta evenly over the pastry.
3 - Roll the puff pastry sheet into a log and then cut at 2cm (just under an inch) intervals. Place onto a lined baking sheet tray and then use the bottom of a cup to press down on the pinwheels to flatten out into thinner discs (don’t completely squash them).
4 – Repeat step 2 with the other sheet and then instead of making pinwheels, cut the pastry into strips down the short side, and then twist the strips. Place on baking paper on a baking tray and brush with milk or whisked egg.
5 - Bake in a preheated oven 200C (390F) for 14 minutes or until pastry is golden brown. Transfer to a cooling rack. Enjoy warm or cool.
NB Za’atar puff pastry pinwheels and twists are best enjoyed within the same day, as puff pastry tends to lose its flaky texture. However, you can store this party food in an airtight container in the fridge and then pop them back into a hot oven until they crisp up again.
